2 cups almond flour

4 tablespoons coconut flour

1 tbsp. ground flax seeds

½ teaspoon natural, unprocessed sea salt

½ teaspoon baking soda

1 tablespoon vanilla extract

½ cup coconut oil, melted

½ cup coconut nectar (if you don’t have any, real maple syrup works well too)

2 dark chocolate bars chopped or dark chocolate chips

Preheat oven to 350 degrees.

Combine all dry ingredients in a large bowl.

Combine all wet ingredients in a small bowl.  Pour wet ingredients into dry and mix well. I then stirred the chopped chocolate into the mixture.

Form into ½” balls and place on a cookie sheet lined with either parchment paper or  Silpat baking pad.

Press dough down to form into round discs since this dough does not spread like regular cookie dough.

Bake about 8 minutes (longer if you like crunchier cookies).

Cool on a wire rack.

Makes 30-36 healthy cookies.
