1/4 cup slivered almonds (any chopped nuts you like would be fine here)
2 cups strawberries, rinsed (or berry or fruit of your choice)
1 cup organic ricotta cheese (I prefer full fat - low fat is ok but never fat free)
2 tablespoons raw or coconut sugar, Lakanto or 3-4 drops of liquid Stevia
1/4 teaspoon each pure almond and vanilla extract
1. Toast almonds or any nuts of your choice in a small dry skillet over medium-low heat, stirring constantly, until golden and fragrant, 2 to 3 minutes. Transfer to a plate to cool.
2. Hull strawberries, slice and divide among 4 dessert plates. Mix ricotta with
sweetener of your choice and almond extract until smooth. Spoon over the
berries and sprinkle with the toasted almonds.
