I found this recipe using one of my favorite mixes from Simple Mills and it is just delicious. I makes a protein-packed breakfast, lunch or snack!

Crusts:

1 box Simple Mills Almond Flour Pizza Dough Mix

2 tbsp. apple cider vinegar

2 tbsp. olive or avocado oil

6 tbsp. water

Filling:

3 large eggs

1/2 cup almond milk (or milk of your choice)

1/4 cup each  finely chopped bell pepper, onion (or whatever veggies you like! Spinach and mushrooms are great too)

If you eat dairy, some shredded cheddar or Monterey Jack. You could make a Greek quiche with spinach and crumbled feta!

Himalayan crystal salt, pepper

Preheat oven to 375 and grease a muffin pan.

In a large bowl combine the crust ingredients and mix to form a dough.

In a separate bowl combine remaining ingredients and whisk well.

Press 1-1/2" ball of dough into each well of the muffin pan, pressing dough up the sides to form a crust. Evenly divide egg mixture into each crust.

Bake 17-20 minutes. 

They're great warm, room temperature or cold!
