Welcome to the June issue of the 3-D Living Newsletter!

June is my birth month, but it's especially exciting this year because my baby, my daughter, Elizabeth, is graduating from high school! For anyone with a June birthday, I wish you a year overflowing with God's favor and blessings. And if you have a graduate in your family, I pray God's wisdom, favor and blessings on them as they begin the next step in this journey we call life!

“Your Food is Talking to You” by Ann Musico

We have conversations every day - with family, friends, employers, strangers - even with ourselves - at least I admit I do. There is a conversation that goes on daily that you may be totally unaware of. Research proves that food is a metabolic messenger providing specific information to your genes. Foods can actually communicate with your genes, turning off those that are destructive and inflammation-producing and turning on those that protect your health. Your food is talking to you at the genetic level!

We know food is more than simply calories you take in to satisfy physical hunger. It is the fuel that provides nutrients for our bodies. We are just beginning to learn how critical good nutrition and lifestyle habits truly are.

God has given us fresh, natural, whole foods to nourish our bodies and science is revealing how foods can trigger genes to send either messages of health or disease. Simple diet and lifestyle changes can trigger those health-promoting genes and actually reprogram our bodies at the genetic level.

This may sound too good to be true, but, honestly it's not! This new branch of science, 'nutrigenomics,' is defined by dictionary.com as: "the study of food and diet and how each interacts with specific genes to increase the risk of certain diseases." The good news is we are not doomed by our genes!

The results of making positive diet and lifestyle changes can be seen very rapidly. In as little as three months, we can trigger health-promoting genes by making careful food and lifestyle choices. Replacing certain foods, exercising regularly and managing stress effectively are powerful choices within your control that have far-reaching health benefits. Functional and so-called superfoods like acai, blueberries, flax, chia seeds and grapes contain powerful biochemical language your body understands. For example, grapes, particularly red ones, contain the powerful phytochemical, resveratrol, found in the skin and seeds, and ellagic acid, an antioxidant. According to the latest research from the American Institute for Cancer Research, resveratrol may be able to prevent, reverse or slow down cell genetic mutations responsible for cancer. Ellagic acid is believed to scavenge the cancer-causing substances in the body.

The first step is to be aware of the choices you make daily. Then listen - your food is talking to you.

They discovered that the liver, the primary detoxification organ, cannot do its job of daily detoxifying the body without phytochemicals and enzymes. The profound changes our clients experience are due to increasing their intake of raw fruits and veggies to 75% of their daily food and eliminating dead, chemical laden food completely.

Give it a try! This is a 75% raw meal:
•   Large salad consisting of 2 handfuls of organic greens (spinach, spring mix, romaine)
•   Shredded carrots, purple cabbage and chopped cucumbers on your salad with a vinaigrette dressing
•   15 raw soaked almonds or 2 Tbs raw sunflower or pumpkin seeds
OR
•   ½ cup cooked, organic beans such as black beans or garbanzo beans
•   3-minute salad (recipe below)

When you eat like this you don’t have to count calories! You would have to fill your tummy with veggies one and a half times to eat 400 calories of raw veggies.

3-Minute Salad – takes less than 3 minutes to make & will keep up to 3 days in refrigerator
•   1 12-oz package of precut organic veggies from the produce section of your supermarket (broccoli, carrots, cauliflower, snow peas, etc.)
•   1 bottle of organic vinaigrette salad dressing (your favorite flavor – mine is an Italian garlic)
Add approximately ½ cup of the dressing to the veggies, stir well, cover and refrigerate. The veggies will become softened and flavored as they marinate in the dressing.

**Super 3-minute Salad
1.   Use in-season veggies that are fresh from the farmer’s market. This is early in the season so you could possibly find Vidalia onions, broccoli, and snap peas, possibly some cucumbers.
2.   Make Sula’s dressing instead of a purchased dressing

Sula’s Dressing (a sweet dressing)
Use for 3-minute Salad

•   4 T flaxseed oil
•   ¼ c lemon juice or Bragg’s apple cider vinegar
•   3 Tbs Raw honey or Raw Agave Nectar
•   1 Tbs minced garlic or ½ tsp garlic powder
•   1 Tbs minced onion or ½ tsp dry onion flakes

Mix well, pour over a mixture of your favorite chopped veggies and marinate for at least 1 hour. Serve over lettuce or cooked sprouted Quinoa as a cold grain salad instead of a pasta salad. Recipe is from Hallelujah! Simple Weekly Meal Plans by Marilyn Polk, www.hacres.com

NUTRITION NUGGET: Whole Kernel Rye

Studies have shown that rye fiber has unique properties that lower blood sugar and insulin more than other types of fiber. But even more exciting than that, this grain has been proven to talk to your genes. In studies, two groups of people ate the same number of calories, fat, carbohydrates, protein and fiber, but one group used wheat, oats and potatoes as their main source of carbohydrates and the other group used rye. The wheat diet activated 62 genes that worsen blood sugar balance, increase inflammation and oxidative stress, turning on biochemical responses leading to obesity, cancer, diabetes and heart disease. That particular diet turned off any good genes and instead turned on these disease-causing genes. On the other hand, the rye diet activated 71 genes found to be preventive of diabetes, high cholesterol, inflammation and high blood sugar. If you're wondering where you can find whole kernel rye bread, I find it in my local health food store. The brand they carry is Mestmacher from Germany.

SUPPLEMENT SPOTLIGHT: Vitamin E

Almost 93% of Americans are deficient in this very important antioxidant, fat soluble vitamin. It is critical for decreasing free-radical damage, protecting the heart, blood vessels and tissues, as well as keeping your blood thin, preventing clotting. The best food sources are cold-pressed olive oil, dark green leafy vegetables, brown rice, nuts, seeds, whole grains, eggs, oatmeal, wheat germ, wheat germ oil and sweet potatoes.
