I made these as a healthier snack to grab over the Christmas holidays and they are a BIG hit! They are sugar free, provide healthy fats, fiber and protein and they are delicious!  They make a lovely gift too if you put them in a pretty jar or bag tied with a ribbon!

1 egg white

3 tablespoons xylitol or Lakanto

2 Tablespoons organic cacao powder (if you don't have this, cocoa works too)

1/4 tsp. vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/8 teaspoon ground cloves

3 cups raw, unsalted nuts of your choosing (almonds, walnuts, cashews, hazelnuts or mixed nuts!)

Preheat your oven to 325 degrees and line a large cookie sheet with either parchment paper or a silicone pad.

In a large bowl beat the egg white until it is light and foamy.  Add the xylitol, cocoa, seasonings and vanilla. Combine until smooth and well mixed.

Stir the nuts into the egg white mixture and stir until they are well-coated.

Spoon the nut mixture onto your prepared cookie sheet and bake in a single layer for 7 minutes. Stir and bake another 7 minutes for about 14 minutes total. Keep an eye on them as they can burn or scorch easily.

Allow them to cool completely. They'll harden as they cool so you may have to break them up. Store in glass containers in the refrigerator (if they last that long!)
