These cookies are soft and delicious - as well as being gluten free and egg free!

1-1/2 cups Oat Flour

1 cup Gluten Free All Purpose Baking Flour

1 Cup Lakanto (or coconut or raw sugar)

¼ cup flax meal

¼ cup chia seeds

¼ cup arrowroot starch

1-1/2 tsp. xanthan gum

1 tsp baking soda

1 tsp. salt

4-6 oz. apple sauce

¾ cup plus 2 tbsp coconut or olive oil

2 tbsp. Vanilla extract

¼ cup shredded, unsweetened coconut

1 cup mini dark chocolate chips

 

Preheat oven to 325. Line baking sheets with parchment paper or silicone mats.

 

In medium bowl whisk together flours, sweetener, flax, chia, arrowroot starch, xanthan gum, baking soda and salt. Add oil, applesauce and vanilla – stir with rubber spatula forming a thick dough. Stir in chips.

 

Drop dough by tablespoonful, forming into thick round, onto prepared baking sheets. Bake 11 minutes or until lightly golden brown. Let stand on baking sheet on cooling rack 5 minutes then tranfer to cooling rack to cool completely.
