My husband LOVES cole slaw as his veggie side dish during the summer months. Either I thinly slice red and green cabbage or buy a bag of cole slaw and just make my own healthier dressing:

1 bag of cole slaw 

1/2 cup avocado mayo

1 tbsp. coconut sugar

1 tbsp. raw, organic apple cider vinegar or coconut vinegar

1 tbsp. dark brown, spicy mustard

salt, pepper

I combine all the ingredients in a large measuring cup with a pouring spout. Then I use a small whisk and whisk until smooth. 

Pour it over the cabbage - toss with tongs to coat all the cabbage. Cover and refrigerate for a few hours to let the flavors marry.
